Who doesn’t love chocolate chip cookies. It’s a favorite in my household and a great treat for any occasion. I made these for several reasons as there are some special little ones in my life who are allergic to diary as well as I wanted a healthier version of my guilty pleasure. I let a variety of people test them for me; those who were vegan and those who weren’t and they were such a hit I had to post the recipe since I keep getting asked for it. They are more moist than the original version and I must say it makes them seem like an even guiltier pleasure! I hope you enjoy them as well.
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup earth’s balance butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 tsp. vanilla extract
- 2 bananas, mashed
- 2 cups chocolate chips
STEP ONE: Preheat oven to 375
STEP TWO: Combine first 3 ingredients in a small bowl. In a larger bowl beat the next 4 ingredients together. Add the mashed bananas beating them in. Little by little add in flour mixture. stir in chocolate chips. Now your ready to bake on ungreased cookie sheet.
STEP THREE: Baking time will vary depending on type of oven so the first go round watch your cookies and time yourself. Be sure to allow cookies to cool once removed from oven.
